What is Lapsang Souchong?
It is a traditional Chinese black tea that is smoke-dried over pinewood fires. This process gives the tea—and this cheese—a distinct, natural smokiness that is much more subtle and complex than artificial smoke flavorings.
Does this cheese have a “rind”?
Through the 4-week aging process, the cheese develops a natural, slightly firmer exterior. This “natural rind” is fully edible and contains highly concentrated smoky notes.

It rates a Good, not great. Not nearly as good as Rebel. Too soft for ‘cheddar’ also.
