Bandit’s Barn Cat is a culinary masterpiece that has been celebrated by the New York Times and VegNews for its uncanny ability to rival traditional dairy. This cave-aged vegan brie is crafted from a creamy cashew base and features a stunning vegetable ash inlay that mimics a classic Humboldt Fog. Expect a bright citrus lift followed by deep, sweet earthy notes and a mild “blue-style” finish. It is widely considered one of the most visually stunning and sophisticated cheeses in the plant-based world.
Allergens: Cashew, Coconut

What is the best way to serve Barn Cat?
For the best experience, let the brie sit at room temperature for 20–30 minutes before serving. This allows the coconut oil and cashew fats to soften, creating that signature buttery, spreadable brie texture.
Is the vegetable ash safe to eat?
Absolutely! The vegetable ash is a traditional cheesemaking ingredient used to neutralize the surface pH. It provides the striking aesthetic and adds a very subtle, pleasant earthiness to the finish.
Is this vegan brie freezer-friendly?
Yes. Bandit Barn Cat Ash Rind Brie ships frozen and can be kept frozen to extend shelf life. Thaw under refrigeration before serving.

This tasted like Humbolt Fog bleu cheese and was delicious!
Laurie Barrie –
How long will this product last in the fridge once opened?
Brad Golden –
The Health Department recommends 7-10 days, but as long as refrigerated and moisture is kept away, it will keep the mold away. The Brie will get stronger just like traditional dairy-based cheese.

My gosh, this is such a delicious soft cheese. the rind is basically identical to dairy Brie rind. My favorite way to enjoy this so far has been to pair it with agave nectar and fig jam.

I just received this cheese yesterday, and oh my God! This tastes like heaven! I had no idea you can make a no dairy brie taste this yummy! I pair it with rosemary crackers and green olives, and it’s delicious! I will order this regularly.
