Storage: Brie needs airflow, so we do not recommend tightly wrapping it in plastic wrap, as this can cause bad mold to develop. Instead, we recommend loosely wrapping pieces in cheese paper or parchment paper and storing them in the crisper. Before storing, apply a piece of wax paper to the exposed area to protect cut surfaces from drying out. Rebel’s brie are made with living cultures, and sometimes mold spores bloom and appear on the rind and inside the cheese, like a layer of fuzz. This growth is normal and is fine to consume.

It was a beautiful cheese. Both I (vegan of 10+ years) and my mother (non-vegan) tasted this cheese and we both loved it. It has a gorgeous rind and complex taste. It is truly a cheese that has been carefully created for both vegans and non-vegans alike who appreciate the finer things in life. It evokes a stinky European cheese or even fermented natto and leaves a pleasant garlic-like taste on your palette that lingers so you can continue savoring the flavor. I love how I was able to find a great selection of vegan cheeses without garlic or onion, oils (all personally upsetting to my stomach), and other impurities and made with organic ingredients and cultures. The shipping was very quick and arrived safely and stayed cold along its journey all the way down to Florida. I appreciate this site as a great way for those interested in plant-based cheeses to try interesting artisan cheeses in the comfort of their home even if they live in areas without great vegan options nearby.

Smooth and creamy with an amazing rind and a surprisingly French taste – it’s something in between a brie and reblochon – with a touch of truffle. A must try if you used to like French cheese.
