This year Bandit was lucky enough to score some delicious local ramps, foraged by their dear friends at Pietramala and thought it would be fun to transform their OG Phillips Mushroom Farm Royal Trumpet Log from a winter classic to a spring delight!
They replaced the garlic in the recipe with a ramp pesto that gets a delicate saute with the caramelized onions. They then fold this into their cultured cashew and dust the finished logs with dried chives. The result is a vibrant herbaceous boost that rings like the perfect sour cream & onion dip & says hello spring! Gluten-Free and Soy-Free. Soft texture.
