Manchego cheese is ivory color, it has a semi-hard texture (though a young Manchego cheese gravitates towards a softer texture) and has a rich, complex flavor with buttery, grassy, nutty, tart, and sweet undertones all mixed together. It is extra crumbly and filled with chunks of Spanish chorizo and tangy green olives. Nut-Free. Firm Texture.
