This Balsamic Bellavitano is a firm-hard cheeze, starting with the taste of a Parmesan, but ending with a creamy buttery finish. It is aged in a reduced balsamic vinegar—the balsamic is washed on the exterior and swirled into the interior. It’s aromatic, and a perfect balance of creamy, sweet, and woodsy all rolled into one. Pairs perfectly with a Pinot Noir.
